Jason,
It should be two pieces, the main keel and the stem. The keel and stem joint is generally where the thru bolts are and they over lap with a scarf type joint.

I would give it a try. You may find that you will have to over bend in the direction opposite the curve to get it straight.
Worst case is that it will not work, but I think with steam and over bending slightly it should come back at least partially.

Why not have the scarfs staggered in a step fashion, that will allow you to have access to the full width of the plank. A right angle grinder could be used in this area and a vibratory saw could be used under a lap if needed.

Buck, Regarding your questions: 1 - The nails were the first to be installed when the stakes were first put on the boat and the screws were in installed after. This was done to speed up the assembly. I do not think that the small areas around the nuts on the interior of the hull will cause any problems with the varnish. That is a very small area compared to the flat surface surrounding these dimples.
It will be fine.

From your description they sound like brad nails that are made for a the air brad nailers. The air nailer was most likely the tool that was used to attach the cover boards as it is fast and the brads are automatically recessed.
