hard to answer the # of coats question..... how thick were the coats, do you have any high or low spots etc.
As for the sticker, I'd wait at least two weeks after the final coat feels completely cured - nothing but a gut feel behind that answer

I spoke too soon! The boat has been in the hot garage for a week now and the hook is back. I wish I had taken a picture of the 'no hook' so I could convince myself that it truly was mostly gone last weekend.....

Problems in paradise - I was moving the boat around back (so I can park my car in the garage during the winter) and with out going into details, it slipped off the trailer dolly and slammed to the ground and bent the main beam of the trailer. I would replace the transom first before disassembling the rest of the structure so as to help maintain the shape of the boat. Thing is, you never know what you will find when you start to peel back the layers. So perhaps build a brace that you can put in right after you remove the transom to replac...
